It is often said: „Beer made thirst beautiful."
We like beer! Or even better – we love beer. During endless discussions about how different beers taste, how they are made, how they should be made, what old-timers used to say about beers from the First Czechoslovak Republic, and all sorts of similar things, we happened to discover that our Heřmanice pub had an unused cellar. Since beer not only shapes fine figures but also sharpens the intellect, we came up with the idea of fitting an entire brewery into the empty cellar. Our own Heřmanice brewery, brewing our own Heřmanice beer – beer you will not find in Michálkovice, Prague, New York or Přívoz. In other words, not anonymous beer from the warehouses of multinational brewing corporations, but exceptional beer with a distinctive character, made by human hands, the traditional way, honestly, without marketing tricks or chemicals, and signed by a brewer of flesh and blood who stands behind his work with his reputation and, before the beer god, with his life:)
There was only one question: whether everything we needed would actually fit into the cellar. It did – down to the last millimetre, as you can see for yourself. The cellar contains a brewhouse (brewing, mashing and lautering vessels) with a capacity of 250 litres, a fermentation room with 12 fermentation vessels of 250 litres each, and a lager cellar with 24 tanks of 250 litres each, giving a total capacity of 6,000 litres. Brewing one batch takes about 9 hours, fermentation in the fermentation room at 8 °C takes 7-10 days, and maturation in the lager tanks at 3 °C then takes 4-6 weeks. We serve the beer by the shortest possible route, directly from a tank in the lager cellar. To push the beer to the taps in our brewery restaurant, we use a special Biogon gas, which prevents oxidation while avoiding excessive carbonation with carbon dioxide.
An essential requirement for high-quality beer is cleanliness – in our case, almost laboratory-level cleanliness. That is why a sanitation unit is an integral part of the brewery. All technological equipment – vessels, pipes, boilers and agitators – is sanitised both before and after production, and the brewer carefully monitors cleanliness throughout the process.
No chemicals are used in the production of our beer. We use neither pasteurisation nor filtration. The basic ingredients are Heřmanice water (originating from the Kružberk reservoir), barley malt from Přerov, hops from Žatec and brewer’s yeast. The result is well worth it – all you have to do is taste it. Cheers!
